Add taco seasoning to the mixture.

Add 1 cup of rice to the skillet and toast it briefly.

Add 1 can of Rotel to the skillet.

Pour in 2 cups of beef broth and bring to a boil.

Once boiling, reduce heat to a simmer (between 1 and 3) and cook for 15 to 20 minutes.

Top with cheese and cover with a lid or place in the oven until cheese melts.

Serve with tortilla chips, or cornbread, and top with sour cream, tomatoes, and lettuce.
