Taco Rice

1 can Rotel (mild)
3 cups rice
3 cups water
1 package taco seasoning

In a one skillet, add 2 pounds of ground beef and turn the heat to medium.

Break up the ground beef and cook until no pink remains.

Drain the excess grease from the cooked ground beef.

Add 1 package of taco seasoning, 1 can of Rotel, 3 cups of rice, and 3 cups of water to the skillet.

Stir all ingredients together and let simmer until the rice is tender.

If using plain white rice, you may need to add more water (up to 3 additional cups) and a second package of taco seasoning for flavor.

For serving, use tortillas to make burritos, or serve over chips for nachos, or as a taco salad.

For the second recipe, clean and dice chicken breasts into small pieces.

In a skillet on medium to medium-high heat, melt about 1 tablespoon of butter.

Add the diced chicken to the skillet and cook until completely done, adding garlic powder, onion powder, chili powder, and crushed red pepper to taste.

Remove the chicken from the skillet once it has browned on the edges.

Add more butter to the skillet, then add diced potatoes and chopped yellow onion.

Sauté for about 10 minutes until potatoes start to color and onions are sautéed.

Add the cooked chicken back to the skillet along with 1/2 cup of chicken broth, can of mushrooms, can of diced green chilies, oregano, and parsley.

Stir everything together and let it simmer until the potatoes are soft.
