Peel the roasted peppers and place them in a deep dish, removing as many seeds as possible.
Dice the peeled tomatoes into small cubes.
Finely slice the peeled peppers into thin strips.
Add the diced tomatoes to the pan over medium heat and mix well with salt.
Add garlic to the pan and stir.
Add a little olive oil to the pan.
Add the chopped peppers to the pan and stir.
Add pepper to the mixture.
Add soy sauce to the pan and mix.
Add the cooked noodles to the pan on medium heat and mix carefully.
Add cottage cheese to the noodles and stir.
Add eggs to the noodles and mix thoroughly.
Add pepper and herbs to the noodles and mix again.
Serve the noodles, adding cheese cubes and sprinkling with herbs.
Drizzle with a little olive oil and finish with a little tomato puree.
