1

Prepare taco seasoning by combining half a cup plus a couple tablespoons of chili powder, five tablespoons of ground cumin, 3 and 1/2 tablespoons of salt, 3 and 1/2 tablespoons of pepper, just shy of a tablespoon each of garlic powder and onion powder, a similar amount of crushed red pepper, and a little oregano.

2

In a large skillet, heat the skillet and add ground beef, breaking it up with a potato masher to create small crumbles.

3

Once some fat renders out, add about half a cup of finely chopped onion to the beef and cook for about 3 minutes until softened.

4

Add three tablespoons of the prepared taco seasoning to the beef and onion mixture, cooking for about a minute until aromatic.

5

Stir in a couple tablespoons of tomato paste and some water to create a saucy mixture, scraping up any browned bits from the skillet.

6

Turn the heat down and let the taco meat simmer for about 5 minutes until flavorful.

7

Heat a large deep skillet and add a thin layer of oil at the bottom.

8

Lay a corn tortilla in the skillet and cook until it starts to bubble and brown, then flip it over.

9

Top one half of the tortilla with cheese and the taco meat, then fold the tortilla over and cook until crispy.

10

Remove the taco from the skillet and fill with lettuce, cilantro, and salsa as desired. Serve with a dip made from Mexican hot sauce, sour cream, and lime.
