Use a spiral slicer to peel, core, and slice the apples into ribbons.
Place the sliced apples into the Instant Pot.
Add 3/4 cup of water to the pot.
Add 2 teaspoons of sea salt to enhance sweetness.
Add 2 teaspoons of fresh lemon juice.
Add 2 teaspoons of ghee to the pot.
Add 1/4 teaspoon of ground cinnamon and 1/8 teaspoon of ground allspice to the mixture.
Secure the lid on the Instant Pot and set the pressure valve to pressure.
Press the manual button and set the timer for 5 minutes, noting it will take about 10 minutes to come to pressure before cooking starts.
Once cooking is complete, let the pressure release naturally.
Use an immersion blender to mash the applesauce to desired consistency, or use a potato masher or fork if preferred.
Serve warm or chill for later use, optionally topping with coconut milk cream and silvered almonds.
