Ingredients

  • 1 lb fresh fish fillets (such as tilapia or snapper)
  • 1 cup fresh lime juice
  • 1/2 cup diced red onion
  • 1 cup diced tomatoes
  • 1/2 cup diced cucumber
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, finely chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 avocado, diced (optional)
  • Tortilla chips for serving

Instructions

  1. 1Cut the fish fillets into small, bite-sized pieces and place them in a glass or ceramic bowl.
  2. 2Pour the fresh lime juice over the fish, ensuring all pieces are submerged. Cover and refrigerate for about 2 hours, or until the fish is opaque and 'cooked' by the lime juice.
  3. 3After the fish is ready, drain some of the lime juice, leaving a little for flavor.
  4. 4Add the diced red onion, tomatoes, cucumber, cilantro, jalapeño, salt, and black pepper to the fish. Mix gently to combine all ingredients.
  5. 5If using, fold in the diced avocado carefully to avoid mashing it.
  6. 6Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.
  7. 7Serve the ceviche chilled with tortilla chips on the side.
