In another bowl, create a dry dredge with rice flour, all purpose flour, potato starch, baking powder, and the remaining seasoning blend, whisking to combine.
Add a few sprinkles of the leftover marinade to the dry dredge and mix with hands to create small crumbs.
Dredge the chicken by first coating it in the wet mixture, shaking off excess, then pressing it into the dry dredge.
Carefully place the dredged chicken into the hot oil, frying in batches to avoid overcrowding.
Cook the chicken at a lower temperature to cook through, then increase the temperature for a golden brown crust.
Monitor the oil temperature and check the internal temperature of the chicken, aiming for 160°F before setting aside.
Let the chicken rest for 15-20 minutes while preparing toppings.
Make the 'Secret Sauce' by mixing mayonnaise, honey, mustard, red pepper flakes, lemon zest, lemon juice, salt, and black pepper.
Chop green and purple cabbage into fine strips for slaw, adding shallot and carrot ribbons.
In a bowl, combine slaw ingredients with a splash of pickle juice and mayonnaise.
