Beef Gravy

Collect beef drippings from roasted beef.
Melt butter in a saucepan over medium heat.
Add chopped onion and minced garlic; sauté until translucent, about 3-4 minutes.
Stir in flour and cook for 2-3 minutes until golden brown.
Gradually whisk in beef broth and water until smooth.
Add beef drippings, thyme, bay leaf, black pepper, and salt.
Bring to a simmer and cook for 10-15 minutes, stirring occasionally.
Mix cornstarch with a little water to create a slurry.
Add the slurry to the gravy to thicken, stirring constantly.
Cook for an additional 2-3 minutes until desired thickness is reached.
Remove bay leaf and adjust seasoning as needed.
Garnish with chopped parsley before serving.
