- 7Pour in chopped tomatoes and cook until they break down, about 5 minutes.
- 8Cover and simmer on low heat for 1.5-2 hours, stirring occasionally, until beef is tender.
- 9Once tender, add coconut milk and lime juice; stir to combine and heat through for 5 minutes.
- 10Adjust seasoning with salt and lime juice as needed before serving.
