Korean smoked duck, or Hoonjeori, is a delicacy often enjoyed during festive occasions and family gatherings. In Korea, smoked duck is often served with fresh vegetables and dipping sauces, embodying a harmonious balance of flavors and textures. Prepare the duck by cleaning and patting it dry.
Mix soy sauce, honey, minced garlic, grated ginger, sesame oil, black pepper, and rice wine in a bowl.
Rub the marinade all over the duck, ensuring it's well-coated.
Cover and refrigerate the duck for at least 4 hours, preferably overnight.
Preheat the smoker to 225°F (107°C).
Remove the duck from the marinade and let excess drip off.
Sprinkle salt and red pepper flakes over the duck for additional flavor.
Place the duck in the smoker, breast side up, and smoke for 2-3 hours until the internal temperature reaches 165°F (74°C).
Once smoked, remove the duck and let it rest for 15 minutes.
Preheat the oven to 400°F (200°C).
Roast the duck in the oven for 15-20 minutes to crisp the skin.
Slice the duck and serve with lettuce leaves, green onions, and sesame seeds.
