Grab an oven proof dish and add 2 cups of basmati rice.
Add 1 teaspoon of freshly ground pepper (or adjust to taste).
Add 2 teaspoons of ground cumin.
Add 1/2 teaspoon of chili powder (optional).
Add 1 teaspoon of kosher salt (or to taste).
Add 2 tablespoons of parsley (more if desired).
Add 1/4 cup of olive oil and mix until well blended.
Add a 16 ounce jar of tomato salsa.
Add 2 cans of rinsed and drained kidney beans.
Pour in 2.5 cups of low sodium chicken broth.
Wrap the dish tightly with aluminum foil and place a cookie tray on top.
Preheat the oven to 350°F and bake for 1 hour and 10 minutes or until rice is tender.
Check the rice for tenderness; if not done, return to the oven and add water if necessary.
Once tender, mix the dish and serve with cheese or sour cream.
