In a large mixing bowl, combine 3 cups of all-purpose flour and 1 tablespoon of salt.
Add 2 coarsely cut jalapeno peppers and 2 cups of shredded cheddar cheese to the flour mixture and mix well with a spatula.
In a separate bowl, combine 2 cups of hot tap water and 1.5 tablespoons of yeast. Mix and let sit for 5 minutes.
After 5 minutes, add the flour mixture to the yeast and water, and fold it in until a sticky dough forms.
Cover the bowl with a towel and let it rise for 1 hour until it doubles in size.
After 1 hour, use a spatula to fold the dough and cover it again for another 30 minutes.
After the second rise, sprinkle some flour on a surface and transfer the sticky dough onto it. Fold the dough over a few times.
Place the dough onto parchment paper and transfer it into a preheated Dutch oven.
Cover the Dutch oven and bake at 450°F for 30 minutes.
After 30 minutes, remove the lid and lightly baste the bread with olive oil. Cut a slit across the top of the bread if desired.
Return the bread to the oven without the lid and bake for an additional 20 minutes.
Once done, transfer the bread to a cooling rack and let it rest for at least 1 hour before slicing.
