Prepare 8 small to medium Maris Piper potatoes, about 100g each, which should serve four people.

Place two wooden spoons on either side of a potato to prevent slicing all the way through.

Make cuts along the potato about 2 mm apart.

Place the sliced potatoes in a shallow ovenproof cast iron pan or roasting tray, ensuring there’s space around each potato.

In a bowl, combine 2 tablespoons of melted unsalted butter and 2 tablespoons of olive oil.

Add 2 minced cloves of garlic (or 1/2 teaspoon of garlic powder), 1/2 teaspoon of dried thyme, and 1/4 teaspoon each of black pepper, paprika, and salt to the bowl; stir to combine.

Drizzle the butter mixture all over the potatoes.

Bake the potatoes in the preheated oven for about 1 hour to 1 hour and 10 minutes, basting them two or three times during cooking.
