Melt a large knob of butter in a deep ovenproof sauté pan.

Fry off one sliced or chopped red onion until it's softened.

Stir in 1 kilo of shredded red cabbage.

Add 2 tbsp of brown sugar and 2 eating apples peeled and coarsely grated.

Finally, add 2 tbsp of red wine vinegar and 200 mL of red wine and gently heat it through.

Cover the pan with a sheet of baking parchment cut to size and a lid.

Place it into an oven heated to 150° C.

After 2 hours, it should be very tender; season to your taste and it's ready to serve.

It will keep in the fridge for 2 days or in a freezer for 3 months.

When reheating your braised cabbage, just add a splash of water and a knob of butter to bring it back to life.
