3

Boil beans for 5 minutes before pressure cooking.

4

Seal the pressure cooker and cook beans at pressure for 20 minutes.

5

Remove beans from the pressure cooker and separate the beans from the liquid, saving the liquid.

6

Fry bacon to release grease, then chop and set aside.

7

Add olive oil to the bacon grease in the pot.

8

Add 1 chopped red bell pepper, 1 chopped green bell pepper, and 2 small onions (or 1 large onion) to the pot; sauté until soft and translucent.

Add garlic powder, onion powder, adobo, ground cumin, salsa tropical, and black pepper; stir to combine.

10

Add more olive oil if needed, then add 1.5 tablespoons of minced garlic and sauté until fragrant.

11

Add 4 cups of rinsed and drained rice to the pot and fry with the sofrito for about 2 minutes.

12

Pour in 4 cups of the bean water, stirring to incorporate.

13

Allow the rice to boil until a good amount of water evaporates, then add in 4 cups of cooked beans.

Cover and cook everything together for an additional 15 minutes.

15

Once done, mix in the chopped bacon and serve.
