Bring the mixture to a boil, then reduce to a simmer.

Add water according to the cooking instructions for wild rice and bring to a boil.
Cook the brown rice for about 20 minutes and the wild rice for about an hour.
While the rice cooks, place chicken thighs skin side down in a skillet to caramelize.
In another pan, add finely chopped mushrooms, onion, and garlic; sweat them down until soft.
Once the vegetables are cooked, add 1 cup of wild rice and 1 cup of brown rice to the pan.
Mix in oregano, a pinch of pepperoncino, and sage for flavor.
Add toasted salted papitas to the rice mixture and stir well.
Cook the rice mixture for an additional 5-10 minutes until heated through.
