Lentil Tacos

5 cups water
2 cups dried lentils
3 cups diced onions
3 to 4 tablespoons taco seasoning

Spray the bottom and sides of the crock pot or slow cooker with cooking spray.

Stir in 5 cups of water, 2 cups of dried lentils, 3 cups of diced onions, and 3 to 4 tablespoons of taco seasoning into the crock pot.

Add 1 to 2 tablespoons of minced garlic to the mixture.

Stir the ingredients together in the crock pot.

Set the crock pot to cook on high for 2 and a half to 3 hours, or until the lentils are as soft as desired.

After 2 and a half hours, check the lentils for softness and stir.

Add kosher salt to taste, starting with a quarter teaspoon, and adjust as needed.

Serve the lentil taco filling in taco shells, on tostadas, or over rice with toppings like guacamole, cheese, lettuce, tomato, and salsa.
