Lentil Tacos

1 cup lentils
1 teaspoon ground cumin
1 teaspoon chili powder
1 cup diced tomatoes

Rinse the lentils under cold water and drain.

In an Instant Pot, combine the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until lentils are tender.

In a skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

Add the minced garlic to the skillet and cook for an additional minute until fragrant.

Stir in the cooked lentils, ground cumin, chili powder, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.

Warm the corn tortillas in a dry skillet or microwave until pliable.

To assemble the tacos, spoon the lentil mixture onto each tortilla.

Top with diced tomatoes, avocado slices, and chopped cilantro.
