Zucchini and Squash Salad with Tomato Relish

Cut the ends off the zucchinis and yellow squashes.
Using a mandolin, slice the zucchinis and yellow squashes into thin strips.
Place the sliced zucchini and squash into a colander and sprinkle liberally with kosher salt.
Let the salted zucchini and squash sit for about 20 minutes to soften and pull out moisture.
Rinse the zucchini and squash under cold water to remove the salt, then dry them using paper towels.
Chop the cherry tomatoes into thirds, which should yield about 2 cups.
In a bowl, combine the chopped cherry tomatoes, 1/2 cup chopped red onion, 3 cloves of finely minced garlic, and 1/4 cup of freshly chopped basil.
Add 1 tablespoon of balsamic vinegar, 1 tablespoon of olive oil, a healthy pinch of salt, and a few grinds of black pepper to the bowl.
Mix all the ingredients together to create the cherry tomato relish.
Layer the softened zucchini and squash strips in a serving dish and top with the cherry tomato relish.
