1 cup cottage cheese

Preheat the oven to 375°F.

Grease an 8x8 baking dish (or a 9x9 if preferred).

Dice one large honey crisp apple and squeeze 1-2 teaspoons of lemon juice on it to prevent discoloration.

Add 1/2 teaspoon of cinnamon to the diced apple and mix together, then set aside.

In a blender, combine the wet ingredients: 3/4 cup milk, 2 large room temperature eggs, 1/4 cup maple syrup, and 1 cup cottage cheese. Blend on high for 30 seconds to 1 minute until smooth.
