1 sweet bell pepper (any color)
1 small spicy red pepper (red jalapeno used)
1/2 cup apple cider vinegar
1/4 cup white sugar
1/2 teaspoon fine sea salt
1/4 teaspoon ground mustard
1/4 teaspoon celery seed
1/2 small onion

Chop 1 cup of banana peppers (about 3 medium) into small pieces.

Chop 1 sweet bell pepper (any color) and remove the seeds and inside.

Chop 1 small spicy red pepper (red jalapeno used) into small pieces.

Mince 2 cloves of garlic.

In a medium pot, add 1/2 cup apple cider vinegar, 1/4 cup white sugar, 1/2 teaspoon fine sea salt, 1/4 teaspoon ground mustard, and 1/4 teaspoon celery seed.

Bring the mixture to a boil, stirring until the sugar is dissolved.

Once the sugar is dissolved, reduce the heat and add the spicy red pepper, banana peppers, chopped onion, and minced garlic (do not add bell pepper yet).

Let the mixture simmer for about 10 to 15 minutes until it thickens up.

Add the chopped bell pepper for the last minute of cooking to preserve its crunch.

Remove the pot from heat and let the relish cool for a few minutes before jarring it up.

Pack the relish into a jar, filling it to the top. Store in the fridge for a few weeks.
