Colombian Sweet Plantains

4 Plantains (ripe)
1½ cups (300 g) Granulated white sugar
4 cups (1 litre) Water
2 Tbsp (30 mL) Coconut cream
1 Tbsp (15 mL) Shredded coconut (toasted)
¼ tsp (1.25 mL) Cardamom (ground) – Optional

Wash the plantains, peel and cut into 1 inch (2.5 cm) slices.

Place all the ingredients in a pot except the coconut cream.

Cover and cook over low heat for 2 hours. If the plantains are not fully ripe, you will need to cook them longer.

Add the coconut cream and swirl the pot to coat the plantain slices with the coconut. Do not stir so the plantains stay intact.

Turn off the heat and serve warm.
