Cheese Gougères

1 cup water
1 stick butter
1 cup all-purpose flour
5 eggs
1/8 teaspoon nutmeg
1 teaspoon pepper
1 1/2 cups grated cheddar cheese

Boil 1 cup of water in a pot.

Add 1 stick of butter to the boiling water and let it melt.

Remove the pot from heat once the butter is melted and the mixture is simmering.

Stir in 1 cup of all-purpose flour until a batter forms, mixing until smooth.

Add 5 eggs one at a time, mixing well after each addition until the batter is smooth again.

Add 1/8 teaspoon of nutmeg, 1 teaspoon of pepper, and 1 1/2 cups of grated cheddar cheese to the batter and mix until combined.

Prepare a piping bag by cutting a tiny hole in the corner.

Pipe the batter onto a baking sheet in small dome shapes or use a teaspoon to plop them onto the sheet.

Preheat the oven to 425°F.

Bake the gougères for about 25 minutes, checking for doneness and adding extra time if they are not browned enough.
