Cheese Gougères

1 cup Gruyere cheese

In a pot, combine 1 cup water, 3/4 stick of butter, and 1/2 teaspoon salt and bring to a low rolling boil.

Once boiling, add 1 cup all-purpose flour and stir until it forms a ball and pulls away from the sides of the pot.

Transfer the mixture to a stand mixer with a paddle attachment.

Crack 4 large eggs into a separate dish, adding them one at a time to the mixer on low speed, allowing the mixture to cool between additions.

Grate 1 cup of Gruyere cheese and add it to the mixture along with any herbs you like (rosemary, thyme, parsley) and lemon zest.

Transfer the mixture into a plastic food-storage bag to use as a pastry bag.

On a baking sheet lined with parchment paper, place a blob of dough in each corner to anchor the parchment.

Pipe small blobs of dough onto the parchment, leaving space between each puff.

Bake in a preheated 400-degree oven until they start to form beads of sweat on top, indicating they are nearly done.
