Homemade Tots with Spicy Cheese Sauce

Roast the potatoes with oil and salt in the oven for about 10 minutes until they have some browning but are still a little raw inside.
Cut the potatoes into small, evenly sized pieces to ensure they cook uniformly.
Add potato flakes to the roasted potatoes for added texture and stability.
Mix in butter with the potato mixture.
Form the mixture into tater tot shapes, pressing gently to avoid making them too dense.
Heat oil in a deep fryer or pot to 360°F, noting that the temperature will drop when the tots are added.
Carefully lower the tater tots into the hot oil to avoid splashing, and fry for about 4-5 minutes until golden brown.
Prepare the cheese sauce by mixing cornstarch with cheddar cheese, hot sauce, jalapeno, and chili flakes.
Once the tater tots are fried, combine them with the cheese sauce in a bowl.
Top with chopped scallions and serve with sour cream.
