Boil the whole royal blue potatoes in salted water for 10 minutes until the skins start to lose color.
Drain the potatoes and let them cool slightly until they can be handled without burning.
Cut the boiled potatoes into quarters or smaller if large, and set aside.
In a bowl, combine 1/4 cup of extra virgin olive oil, 1 tablespoon of minced garlic, and 1 tablespoon of dried mixed Italian herbs.
Add in 1/2 cup of grated Parmesan cheese, 1 teaspoon of black pepper, and 1 teaspoon of salt to the bowl and mix well.
Add the diced boiled potatoes to the bowl and drizzle with a little more olive oil on top.
Add 2 tablespoons of melted butter to the potatoes and mix everything around roughly to create more surface area for crunch.
Spread the coated potatoes on a lined baking tray and place in a preheated oven at 200 degrees Celsius (400 degrees Fahrenheit).
Roast for 30 to 35 minutes, turning the potatoes halfway through at around 20 minutes for even roasting.
Drain any excess oil from the tray and transfer the potatoes to a serving bowl.
