Cut the yellow potatoes lengthwise and then widthwise into cubes, making sure they are as even in size as possible.
Wash the potatoes thoroughly before cutting them to prevent browning if cutting ahead of time.
Drizzle 2 to 3 tablespoons of olive oil over the cut potatoes.
Add fresh minced garlic, onion powder, garlic powder, dry dill, sea salt, and fresh ground black pepper to the potatoes.
Use a rubber spatula to mix and coat the potatoes evenly with the oil and seasonings.
Preheat the oven to 400°F (204°C).
Spread the potatoes out on a silicone lined baking sheet, ensuring they are not piled on top of each other to avoid steaming.
Bake the potatoes in the preheated oven for 15 minutes, then stir them to ensure even cooking.
After another 15 minutes, stir again, and then bake for one last 15 minutes to achieve a golden and crispy exterior.
Top the potatoes with an additional quarter teaspoon of fresh or dried dill before serving.
