Begin with prep work by slicing and dicing one shallot bulb into chunky pieces.
Quarter an 8-ounce box of baby bella mushrooms.
Chop half a pound of bacon into pieces.
Place the bacon into a cold pan and turn on the heat to brown it.
Once the bacon is browned, remove it from the pan and set aside.
Add the chopped smoked sausage to the pan and brown it.
Remove the sausage from the pan and set it aside with the bacon.
Add the mushrooms to the pan and sauté over medium to high heat until tender and lightly golden brown.
Add the diced shallots to the pan and mix well.
Once the shallots are slightly browned, add two cloves of minced garlic and stir.
Trim the leaves from six sprigs of thyme and add them to the pan, mixing well.
Cook for about 30 seconds, then deglaze the pan with 1/3 cup of white wine, scraping the bottom to release the bits.
Reduce the wine on medium heat until mostly evaporated.
Add the bacon and sausage back into the pan and stir everything together.
Sprinkle in 6 tablespoons of all-purpose flour and cook for 2-3 minutes over medium heat to create a roux.
Gradually add 1 cup of chicken broth, stirring to incorporate all the bits.
Then add 2 cups of heavy cream and bring to a simmer over medium heat.
Season with a dash of Worcestershire sauce and freshly cracked black pepper.
Once the sauce thickens, taste and adjust seasoning if necessary.
Add 28 ounces of French style green beans and Italian green beans to the sauce and mix well.
Transfer the mixture to a 9 x 13 baking dish or keep it in the same oven-safe pan.
Bake in a preheated oven at 350°F for 35-40 minutes until bubbly.
After baking, sprinkle French's fried onions on top and return to the oven for 2 minutes to toast the onions.
