Rinse and dry the two large russet potatoes thoroughly, then let them sit for an hour to dry completely.
Cut each potato into four large wedges, resulting in eight wedges total.
Preheat the oven to 350°F (175°C).
Place the potato wedges on a tray with a rack to keep them elevated and prevent browning.
Cover the potato wedges with aluminum foil and bake in the oven for about 20 minutes until tender but not browned.
In a bowl, combine 2 1/4 cups of hot sauce, 1/2 teaspoon of garlic powder, 1/4 teaspoon of ground thyme, 1 teaspoon of all-purpose seasoning, 1/4 teaspoon of cayenne pepper, and black pepper to taste.
Add 2 tablespoons of buttermilk to the sauce mixture and whisk until combined.
Once the potato wedges are tender, transfer them to a bowl and pour the sauce over them, tossing gently to coat without breaking them.
Prepare a flour mixture for coating the wedges, then toss the sauced wedges in the flour until evenly coated.
Deep fry the coated wedges until crispy and golden brown.
