Dice one onion medium.
Slice two cloves of garlic.
Pour out the liquid from 12 ounces of roasted red peppers and slice them into small pieces.
Remove the meat from the casing of 2 Mexican chorizos and break the sausage with your hands.
Preheat a saucepan to medium heat and add some vegetable oil.
Add the diced onions and sweat for about 5 minutes.
Add the sliced garlic and sauté for an additional 2-3 minutes, lowering the heat if necessary to avoid burning.
Add 15 ounces of fire roasted diced tomatoes and 12 ounces of fire roasted red peppers to the saucepan.
Stir in 1 teaspoon of brown sugar, 1 teaspoon of ground cumin, 2 smoked chipotle peppers in adobo sauce, and 1 tablespoon of adobo sauce.
Add 1 cup of chicken stock and season with salt and pepper.
Put the sauce on low heat and let it simmer for about 20 minutes.
Preheat a pan to medium heat, add some vegetable oil, and add the chorizo sausage, cooking for 4 minutes until fully cooked.
Transfer the cooked chorizo to a bowl and set aside.
In the same pan, add more vegetable oil and 15 ounces of washed canned black beans, seasoning with salt and pepper.
Zest half a lime and add juice from a quarter of a lime to the black beans, mixing well and putting aside.
Blend the ranchero sauce with a hand blender until smooth, as the creator prefers it not to be chunky.
In a pan, add vegetable oil and fry 2 flour tortillas until golden brown and crispy.
Cook the eggs sunny-side up in a pan over medium-low heat, basting the egg whites with a spoon to ensure even cooking without touching the yolks.
On a plate, place the fried tortillas and add ranchero sauce on the edges.
Top with chorizo sausage, black beans, and gently transfer the sunny-side up eggs onto the tortillas, creating a nest for the eggs.
Add queso fresco, ripe avocado, radish, and fresh cilantro leaves on top.
