1 whole onion
1 green bell pepper
1 red bell pepper
2-2.5 cups diced peppers and onions
2 cups instant rice
1 cup salsa (picante sauce)
1 cup sour cream (8 oz container)
1 packet fajita seasoning mix
1 can cream of chicken soup
1/2 cup chicken broth
2 cups shredded cheese (KBY Jack or similar)

Cut 2 lbs of raw chicken breast into bite-sized pieces, cutting against the grain for tenderness.
