Tawa Pizza

1¼ cup warm water
1 tsp sugar
½ tsp pink salt
1 tbsp oil
1 cup flour
1 tsp instant dry yeast
1 cup boneless chicken (cubed)
½ tsp pink salt
½ tsp red chili flakes
½ tsp Kashmiri red chili powder
½ tsp garlic powder
1 tbsp lemon juice
1 tsp oil
Mozzarella or cheddar cheese (as required)
Pizza sauce
Oregano
2–3 tbsp water (for steam)

In a bowl, combine warm water, sugar, salt, and oil. Mix well.

Add flour and yeast, and knead into a soft, smooth dough.

Throw the dough ball into the bowl from a height 20–30 times to smoothen it.

Let it rest for 10 minutes.

Mix chicken with spices, lemon juice, and oil. Marinate, then cook in a pan until fully tender. Cover and let it cook through.

Punch down the dough, flatten with hands keeping edges thick and center thin. Roll it evenly.

Add dough to a non-stick tawa. Cover and cook on very low heat for 5 mins.

Flip and cook the other side for another 5 mins.

Flip again, turn off the flame, add 2–3 tbsp water to the pan (to prevent crust hardening).

Spread pizza sauce, cheese, cooked chicken, and oregano. Cover and cook on very low heat for 5 mins until cheese melts.
