While the fries are baking, prepare the cheese sauce by melting 1.5 tablespoons of butter in a saucepan and adding 1.5 tablespoons of flour to make a roux.
Slowly whisk in 1.5 cups of cold milk, ensuring there are no lumps, and bring to a simmer until thickened.
Season the sauce with salt, black pepper, and a hint of cayenne pepper.
Remove the sauce from heat and stir in old yellow cheddar, mozzarella, garlic bread cheese, and asiago until melted.
Once the fries are crispy, pile them up on a plate and pour the cheese sauce over them.
Top with loads of chives before serving.
