Spoon the mixture back into the potato skins, mounding it slightly.
Sprinkle additional cheddar cheese and parmesan cheese on top of each filled potato.
Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, until golden and heated through.
Serve hot, garnished with extra green onions if desired.
