  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

  • 1/4 tsp black pepper
  • 12 small corn tortillas
  • oil for frying

Instructions

  1. 1In a mixing bowl, combine the shredded chicken, cheese, salsa, cumin, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are combined.
  2. 2Heat a small amount of oil in a skillet over medium heat.
  3. 3Warm the corn tortillas in the skillet for about 30 seconds on each side until pliable.
  4. 4Take a tortilla and place about 2 tablespoons of the chicken mixture in the center.
  5. 5Roll the tortilla tightly around the filling and place seam-side down on a plate. Repeat with remaining tortillas and filling.
  6. 6In the same skillet, add more oil if necessary and heat over medium-high heat.
  7. 7Once the oil is hot, carefully add the taquitos seam-side down in batches, frying until golden brown and crispy, about 2-3 minutes per side.

Ingredients

  • 2 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 package (1 sheet) puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon powdered sugar (for dusting)
  • 1/4 teaspoon cinnamon (optional)

Instructions

  1. 1Preheat the oven to 400°F (200°C).
  2. 2In a medium bowl, combine the blueberries, granulated sugar, cornstarch, lemon juice, vanilla extract, and cinnamon (if using). Mix gently until the blueberries are coated.
  3. 3On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases. Cut the pastry into 4 equal squares.
  4. 4Place a spoonful of the blueberry mixture in the center of each pastry square, leaving a border around the edges.
  5. 5Fold the pastry over to form a triangle and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
  6. 6Place the turnovers on a baking sheet lined with parchment paper. Brush the tops with the beaten egg to give them a golden color when baked.
  7. 7Make a small slit on the top of each turnover to allow steam to escape during baking.
  8. 8Bake in the preheated oven for 20-25 minutes or until golden brown and puffed up.
  9. 9Remove from the oven and let cool slightly before dusting with powdered sugar.
  10. 10Serve warm or at room temperature.
