300g chicken thigh, thinly sliced
2 teaspoon sunflower oil
1 onion, finely chopped
1 celery, finely chopped
1 carrot, thinly sliced
1 can diced tomatoes
1 garlic, chopped
1/2 teaspoon cumin seeds
1/2 teaspoon ground coriander
1 - 2 sprigs fresh coriander

Heat up sunflower oil in a pot.

Add the thinly sliced chicken. After frying for a while, add cumin and coriander.

When the meat is slightly cooked, add the onions.

Allow the onions to cook for a while, then add the celery and carrots.

Add the garlic.

Add tomatoes.

To make the soup, add water to the pot.

For more flavour, add healthier choice chicken stock cubes.

To make the chilli, slice 1 - 2 jalepeno peppers. Remember to remove the seeds before adding to the soup.

Allow soup to simmer for 5 - 7 minutes.

Chop up coriander leaves and add to the soup.

Serve hot.
