Chop 2 large onions and add them to the slow cooker pot.
Chop 4 cloves of garlic into small pieces and add them to the slow cooker pot.
Chop 1 small cauliflower into cubes and add it to the slow cooker pot.
Cube 2 large apples and add them to the slow cooker pot.
Cube 4 small courgettes and add them to the slow cooker pot.
Cube 2 large courgettes and add them to the slow cooker pot.
Cube carrots into small pieces and add them to the slow cooker pot.
Chop 12 dates into small pieces and add them to the slow cooker pot.
Pour 150 ml of maple syrup into the slow cooker pot.
Add 1 teaspoon of salt to the slow cooker pot.
Add 2 teaspoons of ground mixed spice to the slow cooker pot.
Add 0.5 teaspoon of cayenne pepper to the slow cooker pot.
Pour 200 ml of apple cider vinegar into the slow cooker pot.
Squeeze the juice of 1 lemon into the slow cooker pot.
Mix all the ingredients together thoroughly in the slow cooker pot.
Set the slow cooker to low heat and cook for 8 hours overnight.
After cooking, let the mixture cool for about 4 hours.
Transfer the pickle into glass jars for storage.
Store the jars in the fridge for about a week before consuming.
