1¾ cup (400g) Boiled Chestnuts
¾ cup + 2 tbsp (200g) Milk
3 tbsp (45g) Light brown sugar
¼ cup (60g) Whipping cream
2 tbsp (35g) Soft unsalted butter
3 Egg yolks
2 tbsp (25g) Sugar
⅔ cup (145g) Heavy cream
1 cup (227g) Mascarpone, cold
2g Gelatin sheet
¾ cup (200g) Chestnut paste
3½ tbsp (50g) Soft Butter
¼ cup (50g) Powdered Sugar
2 tbsp (15g) All purpose flour
½ cup (50g) Almond flour
1 Beaten egg
A pinch of salt
1 tsp (5ml) vanilla Paste
1½ tbsp (25g) Chestnut paste
⅔ cup (150g) Heavy cream
2½ tbsp (30g) Sugar
1¼ cup (300g) Chestnut cream

Combine all ingredients for chestnut paste in a blender or food processor and blend until smooth.

Transfer the chestnut paste mixture to a pan/pot then cook over medium-high heat, stirring continuously to prevent burning. Once thickened, remove from heat and let cool.

Whisk together egg yolks and sugar until smooth, then set aside.

Bloom gelatin in water, then squeeze out excess water.

Heat heavy cream, and slowly pour over egg mixture while whisking. Pour back into saucepan and cook until it reaches 185℉ (85°C). Remove from heat.

Place mascarpone in a mixing bowl, pour hot cream mixture through a sieve into the bowl to remove lumps. Blend until smooth.

Microwave bloomed gelatin for 10 seconds and add it to the mascarpone-cream mixture, blending until fully incorporated. Add chestnut paste and blend until smooth.

Pipe the chestnut cream into small dome silicone molds and freeze for at least 1 hour.

In a mixing bowl, combine softened butter and sugar for chestnut-almond cream, mix until creamy. Add all-purpose flour, almond flour, salt, egg, and vanilla paste, mix until well combined. Finally, add chestnut paste and mix until smooth.

Use a piping bag to pipe a layer of chestnut-almond cream into each tartlet. Bake at 325°F (162°C) for 15 - 18 minutes or until lightly golden brown.

Whip heavy cream with sugar until soft peaks form. Pipe whipped cream around frozen chestnut cream domes, forming tall cones. Freeze for at least 30 minutes.

Combine chilled chestnut cream and chestnut paste in a mixing bowl, mixing well. Transfer to a piping bag fitted with a Mont Blanc nozzle tip.

Once the cream mountains are frozen, transfer each onto filled tart cases and pipe chilled chestnut cream around each mountain in a spiral.
