Almond Horchata

Cultural Context

Originating from the Iberian Peninsula, horchata has evolved into various forms across Latin America. In El Salvador, almond horchata is a cherished beverage, often enjoyed during festive occasions and family gatherings. Its creamy texture and sweet, spiced flavor make it a refreshing treat, especially on hot days. Today, it is popular not only in Salvadoran households but also in many Latin American communities worldwide, often served alongside traditional meals or as a standalone refreshment.

Almond milk provides a dairy-free option while maintaining a similar flavor.

1

Start by soaking rice and almonds in water overnight.

2

Prepare simple syrup by combining granulated sugar and water in a saucepan.

3

Heat the saucepan on the stove, stirring for about 3-4 minutes until the sugar dissolves completely.

4

Turn off the heat and let the simple syrup rest until ready to use.

5

In a blender, add the soaked rice, soaked almonds, and the cinnamon stick along with the water they were soaking in.

6

Blend the mixture for about 2 minutes until it is nice and liquidy.

7

Strain the blended mixture through a sifter into a bowl, whisking to separate the liquid from the solids.

8

Add 1 can of evaporated milk and 1 can of condensed milk to the strained liquid, mixing well to combine.

9

Add about 2 tablespoons of vanilla extract and mix again.

10

Taste the mixture and add the prepared simple syrup to sweeten to taste, mixing well.

11

Prepare a pitcher with ice and pour the almond horchata over the ice.

12

Mix one last time before serving.
