Prepare the dough for 3 tarte flambée by adding 250g all-purpose flour to a bowl.
Add 125mL water to the flour.
Incorporate 2 tablespoons sunflower oil and 1 teaspoon salt into the mixture.
Whisk gently to combine the ingredients.
Use your hands to mix until the bowl is clean and the dough is not sticky.
Let the dough rest for a minimum of 1 hour at room temperature.
Divide the dough into 3 equal parts, each weighing 120 grams.
Preheat the oven to 170°C (340°F) for pre-baking.
Press the dough into a shape on a baking plate dusted with flour.
Roll out the dough as thin as possible using a rolling pin or a glass.
Pre-bake the dough in the oven for 6 minutes to reduce humidity and achieve a crisp texture.
After pre-baking, check for small bubbles on the surface of the dough.
Prepare the topping by mixing creme fraiche with a little nutmeg or black pepper.
Slice the red onion thinly and add it to the topping mixture.
Add thinly sliced bacon on top of the onions.
Place the prepared topping on the pre-baked dough.
Bake the assembled tart in the oven at maximum temperature for 5-7 minutes until the edges are slightly blackened and crispy.
