Mix 6 cups of bread flour, 1 tablespoon of instant yeast, 2 teaspoons of kosher salt, and 2 tablespoons of room temperature butter in a bowl.
Add 1/4 cup of honey and 2 cups of beer to the mixture.
Mix on low speed for about 4 minutes.
Increase speed to medium and mix for about 2 minutes until the dough is smooth and has some spring.
Add 1 cup of shredded cheddar cheese and mix for 30 seconds to 1 minute until incorporated.
Move the dough to a lightly greased bowl and let it rest for about 1 hour until nearly doubled in size.
Preheat the oven to 400 degrees Fahrenheit.
Grease a 9 by 13 pan with butter.
Place the dough on a lightly floured surface and divide it into 12 individual rolls.
Cover the rolls and let them rise for another 35 to 45 minutes until very puffy.
Melt 2 tablespoons of butter and brush it on top of the rolls.
Top the rolls with 3/4 cup of cheese, keeping it away from the edges.
Bake in the oven for 17 to 22 minutes until golden brown and the internal temperature reads 190 degrees Fahrenheit.
Let the rolls rest for at least 10 minutes before serving.
