Preheat the oven to 350°F (175°C).
Clean the hen and pat it dry with paper towels.
In a skillet, heat olive oil over medium heat.
Sauté chopped white onion, garlic, and green chili until softened, about 5 minutes.
Add diced carrots, potatoes, chayote, and green beans, cooking for another 3 minutes.
Stir in ground beef, black sauce, mustard, raisins, almonds, cumin, oregano, black pepper, and garlic salt until well combined.
Remove from heat and let the mixture cool slightly.
Stuff the hen with the ground beef mixture, securing the opening with kitchen twine.
Place the hen in a roasting pan and pour chicken broth around it.
Cover the hen with foil and roast for 1 hour.
Remove the foil and continue roasting for another 30-45 minutes, basting occasionally, until golden brown.
Check the internal temperature, which should reach 165°F (74°C).
Let the hen rest for 15 minutes before carving.
Serve with rice and a side salad.
