Drain a can of chickpeas over a bowl to collect the aquafaba.

In a bowl, combine 1/2 cup all purpose flour, 2/3 cup chickpea flour, 2 1/4 teaspoons baking powder, 1/4 teaspoon salt, and 1/4 teaspoon turmeric. Whisk together and set aside.

In a separate bowl, pour in 1 1/2 cups of water, followed by 6 tablespoons of aquafaba, 3/4 teaspoon of apple cider vinegar, and 1/2 teaspoon of Dijon mustard. Whisk until frothy.

Pour the wet ingredients into the dry ingredients and whisk to combine.

Let the batter rest for at least 10 minutes.

Prepare the muffin tin by adding about 1 teaspoon of oil to each cup and place the tray in a preheated 425°F oven for 10 minutes or until smoking hot.

Quickly pour the batter almost all the way to the top of each cup using a jug.
