Cook bacon in a skillet until crispy, then set aside on a paper towel plate.

Add shallots to the bacon grease in the skillet and cook for about 2 minutes until browned.

Whisk in red wine vinegar and Dijon mustard to the shallots in the skillet, using about 3/4 of a tablespoon of mustard.

In a bowl, combine fresh spinach, chopped red onion, and button mushrooms, and toss together.

Pour warm dressing over the salad, using only some of it.

Sprinkle chopped bacon over the top of the salad.
