Preheat the oven to 400°F (204°C).
Add two 16 oz bags of frozen hash browns to a large mixing bowl.
Add 1 teaspoon of salt, 1 teaspoon of garlic powder, 0.5 teaspoon of ancho chili powder (or paprika), 0.5 teaspoon of dried thyme, and black pepper to the bowl.
Toss the hash browns with the seasonings to distribute evenly.
Add 0.5 cup of grapeseed oil to the bowl and toss to coat the hash browns.
Line a sheet pan with parchment paper and spray the bottom with grapeseed oil.
Pour the hash browns onto the prepared sheet pan and spread them out evenly.
Bake in the preheated oven for about 45 minutes, or until golden brown.
Let the hash browns cool slightly, then transfer to a cutting board using the parchment paper and cut into squares or triangles.
