1 28 oz can Hunts whole tomatoes
1 medium onion
1 small red bell pepper
36 oz or 4 cups water
1 1/2 to 2 tsp. onion powder
2 tsp. chicken bullion paste
1/8 tsp. each of oregano
1/8 tsp. each of thyme
1/8 tsp. each of epazote
1/8 tsp. each of cumin
1 small bay leaf
About 2 tbs avocado oil
1 tbs sugar
Salt and pepper to taste
Queso fresco
Corn tortillas
Mexican crema or sour cream (optional)

Cut the onion and bell pepper into thin slices.

In a medium pot, add 2 tbs oil, onions, and peppers. Sauté on medium heat for about 5 minutes.

Add oregano, thyme, epazote (or poultry seasoning). Cook for 5-7 minutes.

Separate about 1/4 of the mixture and set aside.

Add the tomatoes, bouillon paste, onion powder, cumin, and water. Stir well.

Let it come to a low boil. Using an immersion blender (or a blender), blend it until you have a smooth sauce.

Add the bay leaf and sugar, lower the heat and cook for 5-7 minutes uncovered.

Taste and adjust the seasoning. Return the reserved onions and peppers to the pot.

Lower the heat, cover, and cook for 5 minutes. The sauce is done! Set it aside and keep it hot.

Shred the cheese.

Preheat a skillet to medium-low heat. Add oil and fry the tortillas until they are soft, about 3-5 seconds on each side.

Once the tortillas are done, stuff them with cheese and roll them.

Set them on a plate, pour some sauce over, some cheese, and Mexican crema.
