Put a bowl and mixer beaters in the freezer to chill.
In a pan with a tight-fitting lid, bring 2 cups of water to a boil.
Once boiling, pour in 1 cup of long grain rice, cover with the lid, and reduce heat to low.
Set a timer for 20 minutes and do not stir or lift the lid during this time.
After 20 minutes, remove the bowl and beaters from the freezer.
Pour 1 cup of heavy whipping cream into the chilled bowl and start mixing on low.
Increase the speed to medium and continue mixing until it thickens.
Once thickened, increase the speed to high until it resembles store-bought whipped topping.
Transfer the cooked rice to a bowl and place it in the fridge to cool.
Combine the whipped topping with the cooled rice in a large bowl.
Drain 2 cans of chunk pineapple and add to the mixture.
Mix in 1/4 cup of sugar and 1 cup of multi-colored marshmallows.
Combine everything together and serve, optionally topping with maraschino cherries.
