Soak 4 shiitake mushrooms in water for 4 hours.

Wash 200 grams of short grain rice three times to remove starch.

Add 20 cl of water to the rice and cover with a lid.

Cook the rice on high heat for 7 minutes, then reduce to low heat and cook for another 4 minutes until all moisture is absorbed.

Prepare the other ingredients while the rice is cooking.

Cut 200 grams of beef into thin sticks and place in a bowl.

Crush 2 garlic cloves and mince 1 spoon of onion.

Marinate the beef with 1 pinch of salt, 1 pinch of ground pepper, 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, 1 teaspoon of honey, 1/3 of the crushed garlic, 1/2 teaspoon of roasted sesame seeds, and 1 teaspoon of minced spring onion. Mix and refrigerate.

Cut 1/2 carrot into thin julienne and place in a bowl. Add 1/2 teaspoon of salt, mix, and let it disgorge.

Cut 1/2 zucchini in the same way as the carrot and place in a bowl.

Cut 1/3 of a red pepper into small chunks.

Blanch 100 grams of spinach in boiling water for 1 minute, then drain and rinse in cold water. Press to remove excess water and place in a bowl.

Season the spinach with 1/4 teaspoon of salt, 1 pinch of ground pepper, 1/3 of the sesame oil, and 1/2 teaspoon of sesame seeds. Mix well.

Prepare a small pot of boiling water and add 100 grams of bean sprouts. Cook for 3 minutes, then drain and rinse with cold water.

In a pan, heat 1 tablespoon of vegetable oil and sauté the carrot for 1 minute, zucchini for 30 seconds, red pepper for 20 seconds, and shiitake mushrooms for 2 minutes, stirring occasionally.

Prepare 2 egg yolks and set aside.

Use chopsticks to separate the rice grains after cooking.

To assemble, in a stone bowl, add 1 tablespoon of sesame oil, then a portion of rice, followed by alternating portions of each vegetable on top of the rice.
