1

Thinly slice or shred one head of fresh cabbage to yield around one pound.

2

Shred two medium-sized carrots and thinly slice half of a red onion.

3

Bring two cups of water to a boil, add one tablespoon of salt, and mix until dissolved.

4

Shut off the heat and add 2/3 cup of white distilled vinegar to the boiling water.

5

Combine the shredded cabbage, carrots, and onion in a bowl.

6

Add two teaspoons of Mexican oregano and mix well.

7

Pour the hot pickling liquid over the vegetables and mix thoroughly.

8

Cover and let it sit on the counter for about an hour before refrigerating.

9

Prepare the bean filling by pureeing one and a half to two cups of black beans with half an onion, a quarter of a green bell pepper, and one small roma tomato in a food processor.

10

Add a quarter cup of water to the bean mixture and cook in a pan with two to three tablespoons of oil over medium heat until thick and paste-like, adding salt to taste.

11

Allow the bean mixture to cool completely before mixing in 10 ounces of grated Oaxaca cheese.

12

In a bowl, combine around four cups of instant corn flour for masa, one tablespoon of oil, and warm water to form a dough with a play-doh consistency.

13

Let the dough rest for 15-20 minutes, covered to prevent drying out.

14

Prepare a baking sheet lined with wax paper for the assembled pupusas.

15

Mix a quarter cup of oil with water for dipping hands while shaping the pupusas.

16

Take a portion of dough, make a well in the center, add the bean and cheese filling, and enclose it with the masa, then flatten into a disc.

17

Repeat the process until all pupusas are formed; you should have around 13 pupusas.

18

Preheat an electric griddle to between 300 and 350 degrees Fahrenheit and add a little oil.

19

Cook the pupusas on the griddle, flipping when they start to bubble and puff up, indicating they are cooked inside.
