Combine chicken, sofrito, adobo, and garlic in a large bowl and mix thoroughly.

Marinate chicken in the fridge for 30 minutes to an hour.

Place whole chicken thighs skin side down in the pot and add small pieces of chicken on top.

Remove the lid and mix the rice, moving the chicken thighs to a plate and fluffing the rice without breaking the grains.

If the rice is still al dente, add a little water, replace the chicken thighs, and cook for another 5 to 10 minutes on low.
